Totopan started with a simple conviction: that bread should taste like bread — not like the word. Our bakers arrive before sunrise because a good sourdough doesn't care what time it is; it only cares about time.
Every loaf, every croissant, every tart that leaves our kitchen has earned its place. We use European-style butter, stone-ground flour, and a starter that we've been feeding for years. There are no mixers on fast-forward here.
